Sharpen All Your Senses with Eggs

Although eggs were always considered healthy, their reputation has risen in recent years as a whole food that does wonders for the health. Here are a few of benefits of eggs and how you can get them:

1. Lightning fast recall

One egg yolk provides up to 300 mcg. of choline, making the egg a very good source of this brain-boosting nutrient. Choline is a key component of acetylcholine, a brain chemical that keeps memory-essential neurons supple, heightening their ability to rapidly accept information. Get your memory at its peak with this easy-to-make iconic Greek soup.

Avgolemono Soup (makes 4 servings)

Take a large saucepot and spray it with olive oil. Then brown 1 cup of diced chicken breast for 1 minute, tossing constantly. Add 2 cans of chicken broth; bring to a boil. Add 1 1/2 cups instant rice; reduce heat to medium and simmer 2 minutes. Slowly stir in 1 slightly beaten egg. Add 2 tbs. fresh lemon juice. Garnish with lemon slices and green onions.

2. Crystal clear vision

The best way to fill up on the eyesight protecting antioxidant lutein is to consume eggs. The reason: the lutein from egg sources is more readily absorbed by the body, thanks to the abundant fats in yolks. Lutein thwarts free radical damage to the retina by preventing inflammation of the macular pigment. This part of the eye shields the retina from the damaging effects of light, improving vision. Omelette Tostadas (makes 4 servings)

For this dish, 4 eggs are tobe used. Beat each one in a bowl.; pour into greased skillet over medium heat. Cook egg for 2 minutes, turning once. Place on plate. Repeat with remaining eggs. Divide 1 can of heated refried beans; 1 cup shredded Cheddar cheese; 1 avocado, pitted, sliced and diced, and 1/4 cup prepared salsa among egg tostadas. Garnish with fresh cilantro leaves.

3. Freedom from UTIs

Eating eggs can help prevent urinary tract infections. The credit for this phenomenon goes to peptides, the proteins found in egg whites that bind to the bacteria E. coli which causes infections. This process prevents the bacteria from adhering to the walls of the urinary tract. Fight infection with this healthy salad.

4. Fifty percent drop in appetite

Chef Secret to Fluffy Omelettes:

The secret? Cook the eggs only three-quarters of the way. Once the bottom has set, the edges are dry and the top is slightly runny, cover the pan and remove it from the heat. Let it sit for 30 seconds. The lid traps the heat and finishes the top without overcooking the bottom.
